In the most recent version, at least on Windows XP and 7, it is possible to harvest wheat before it fully matures. Of course, if you do this long enough, you destroy the plant, but I can normally get around 3 wheat every time I do this. I'm not sure if this is a bug or not, but it makes gameplay less challenging.
