I think it would be really cool to have an alchemy table for making potions that give buffs for a short duration. It could be bought just like the workshop, and an "Alchemist" job could allow your workers to take a list of orders(just like the workshop). You would need to make glass bottles and a few ingredients for different potions. A few potion examples could be...

Iron Hide potion
purpose: grants increased defense
requires: iron ore, stone block, meat, glass bottle

Agility potion
purpose: grants increased speed (more ingredients used= higher speed boost maybe?)
requires: berries, wheat, flower seeds, glass bottle

Acrobat potion
purpose: grants the ability to jump one block
requires: wool, flower seeds, stone stair, glass bottle

A few other potions could be a strength potion(increased damage), feather potion(glide when falling from heights), Xray potion(see through opaque blocks when above you). Maybe even some sort of temporary monster repellent. I would really love to have an extra edge in battle aside from buying better weapons and clothing.

Would add a lot more depth to the game (and would be a good reason to force the players to find rare ingredients (which would could make the map bigger)) I like it.

How about:

Potion of shape-change:
Player turns into random creature.

Potion of cat:
Player can see in the dark.

Potion of water walk:
Player can walk on water.

Alchemy would be useful. But how to make it useful, yet not gamebreaking. Fun, and not easy.
Obviously being able to make healing and revive potion (latter one would increase amount of certain ingredient, same as price in shop with each purchased one).
Fireworks maybe? Grenades/Molotov? Crafting landmines? Brewing "drinks" for your workers? This could lead to advanced worker system (different stats and behavior depending on sleeping, food, drunkness).

I totally agree. It might be a bit of work to keep the game balanced, but I think it would be worth it. I love this game but after i get decent equipment (at least iron gun and a few turrets) and a couple workers to maintain food, i find myself dawdling around during the day (not wanting to spend gold on speed clocks) just waiting for night so i can make more gold.
I would love some more motivation (other than workshop crafts) to gather resources and expand my base.
