I've been playing around with water, digging, and buckets, and have come to the conclusion that I have no idea what its about.
I dig a trench and it only fills up partially. I connect to rivers, but they still don't fill up my moats. I use buckets, but the water seems to evaporate or something. I just don't know what the water properties are, and there is very little info anywhere on the web.
Any information, ideas, thoughts, or suggestions would be great!

The primary use of water is to irrigate your wheat, so it can grow, then you can sow it and cook it to produce bread, which is going to be your primary food for *almost* the entire game.
The secondary use is just like you said, is for filling moat, but it won't serve it's purpose unless you have figure out how to force the enemy to enter the water-filled moat first before entering your base.

Thanks for the reply! My main problems with water are...
1. My moats won't fill up. I connect to a river, I use buckets to put water in, but the water level never fills up.
2. In the update, it says -"[modification] Wheat can "drink" water below it."-. I assumed this meant I could finally grow wheat without my workers falling in the trench, but I can't seem to get it to work.

Hmm, 1 probably because of the water mechanic, you should ask achoum for it.
2 is more like you can create irrigation system under your base, i've never build it like that, but i guess it means more land to use. Imagine it as your house pipe. :D
